First of all you have to add your chicken pieces in large bowl






Then add all the ingredients from garlic paste to salt mentioned below









Combine everything nicely cover and leave it to marinate for atleast two hours in refrigeration 










Ingredients

  1. Chicken Drumsticks or Legs – 4 to 6 large ones (1 kg/2.2 lbs approx)
  2. Lemon Juice – 1 tbsp
  3. Oil – for shallow frying

Marinade

  1. Kashmiri Chilly Powder – 1.5 to 2 tbsp (Alter according to your spice tolerance)
  2. Turmeric Powder – 1/2 tsp
  3. Coriander Powder – 1 tbsp
  4. Black Pepper Powder – 1 tsp
  5. Ginger Garlic Paste – 2 tbsp
  6. Garam Masala Powder – 1/2 to 1 tsp
  7. Chicken Masala Powder – 1 tbsp (optional) [I use store bought Eastern or Nirapara brands]
  8. Lemon Juice – 1 tbsp
  9. Salt – to taste

Let's begin the cooking process 

You need to cut  2 onion 1 green chilli and 1 tablespoon ginger garlic paste and 1 tomato that's it 

Heat enough oil in a heavy bottom pan then we 







have to  add  cumin seeds to oil ,after 10 seconds we will add onions and green chilli ,we have to cook it until onion gets 80% brown then 


we have to add 1 tablespoon of ginger garlic paste and keep steering it otherwise it get burn after 2 or 3 minutes of ginger garlic paste, 


we have to add a tomato and 1/4 glass of water and keep steering it for 5 minutes ,keep it on medium  flame then we will add our marinated chicken for frying at medium heat 


fry the chicken pieces in baches for about 4 to 5 minutes and then turn it around and continue frying for another 4 to 5 minutes or until the chicken is evenly browned and it's crisper on the outside


 ,make sure you keep the heat on medium flame,so that the inside of chicken  gets cooked well too ,flip the chicken pieces frequently to avoid burning,now our super delicious chicken fry is ready,

  



 remove it from the fire and transfer to a paper towel,allow to slightly cool,in the same oil fry a little bit of curry leaves and green chillies ,and garnish ,  you can serve it now with rice or whatever you like

Friends it doesn't take long time, all you need to do is take your pot, and heat the oil on medium flame, 

Then put your  marinated chicken into the pot , let it fry for 3 minutes,  

 then turn it with the help of tong again fry it for 3 minutes, after this process

 you have to notice that it is completely brown or not, if not then fry it little bit more,  here your chicken fry is ready,
